If you are buying tanks or process equipment for food, beverage or pharmaceutical production, one question comes up again and again: 304 or 316 stainless steel? Both are food-grade austenitic stainless steels, but they are not interchangeable. Here is how to choose.
The key difference: molybdenum
The headline difference is that 316 contains roughly 2–3% molybdenum, which 304 does not. That molybdenum sharply improves resistance to chlorides and acidic environments — the things that cause pitting and corrosion in stainless steel. 304 (often seen as 1.4301) and 316 (1.4401) are otherwise similar in appearance, strength and hygiene.
When 304 is the right choice
304 is the workhorse of food and beverage production and handles the majority of applications perfectly well: water, beer, wine, milk, many juices, and general storage and mixing where chloride exposure is low. It costs less than 316 and is more widely available second-hand, so for straightforward storage and process duties it is usually the economical, sensible choice.
When you need 316
Step up to 316 when the product or cleaning regime is more aggressive: high-salt or brine products, acidic juices and sauces, dairy with intensive CIP, pharmaceutical and high-purity applications, and anything with significant chloride content. 316 also earns its premium in coastal or washdown-heavy environments. If in doubt with a corrosive product, 316 is the safer specification.
Cost and availability
316 typically carries a noticeable price premium over 304 because of its molybdenum and higher nickel content. On the used market, 304 tanks are more common and move faster, while good 316 vessels — especially food-grade, jacketed or insulated — are worth securing when you find them.
A quick rule of thumb
If your product is neutral and low in chlorides, 304 will almost certainly do the job at lower cost. If it is acidic, salty, high-purity or subject to harsh cleaning, specify 316. When the difference matters to product quality or tank life, the upgrade pays for itself.
